Ingredients
500 grams chopped pineapple pulp
500 grams sugar
juice of 1 lemon
Method
1. grind pineapple pieces to a little coarse pulp leaving a few small pineapple chunks in it
2. keep pan on medium heat. add the pineapple pulp & sugar. mix well
3. stir till the sugar dissolves completely
4. stir cook the mixture till the extra water dries up & the jam becomes thick. do a plate test
5. transfer the jam to a bowl & let cool completely
6. transfer to a dry, sterilized bottle. cap it tightly & store in the fridge
7. the pineapple jam will remain good for 2-3 months
